LINE COOK -PM
Country Cat at the Portland International Airport
is currently looking for experienced PM Line Cooks to join the team.
Basic Function: Preparation and plating of all items on the brunch/dinner menu, including daily specials. Preparation will be for the respective items for each dinner station dependent on which station cook is working, be it Fish, Middle, Meat.
Qualifications: Must have at least two years of experience working in a quality restaurant. Culinary degree desired but not required.
Receive menu changes and new dish descriptions from Kitchen Manager/Sous Chef on shift. Communicate with Pastry Chef any pastry needs for station.
Arrange prepped ingredients in an orderly fashion and maintain temperatures for each item accordingly.
Maintain all equipment as it is used: Wash all parts of Cuisinart, blenders, mixers, mandolins after you have used them.
Awareness of product and quality. If quality is not to restaurant specification, inform sous chef or chef.
Ensure that service is ready for the designated shift (Brunch/Dinner)
Ensure a solid communication between stations during service when coordinating food pick-ups.
Set up prep for following day if applicable as time permits.
Clean specified areas after each service according to cleaning schedule.
Confer with Chef or Sous Chef at the end of shift regarding product to be ordered for station for the next day, as needed.
